Clams in Beer Stock

Was craving for clams ever since we went to New Harbour Bar, so Pakcik and I decided to try cooking it at home.

Here’s the ingredients:
– 1.5 cup of frozen clams (defrost)
– 1 medium white onion (sliced)
– 4 cloves of garlic (chopped)
– 2 chilli padi (sliced)
– 1 can of beer
– some olive oil
– 0.5 tbs butter
– black pepper and salt to taste

Heat up a pot with olive oil and butter, and throw in the onions, garlic and chilli padi. Allow the onions to soften and the garlic to brown. Be careful not to burn the garlic. Next, pour in the can of beer (I used Tiger beer) and clams. Allow it to boil.
Season with black pepper and salt, then serve immediately.

We used frozen clams because there wasn’t any live ones in the supermarket we went to. If the stock is lack of flavor, just add in a bit of chicken stock powder/cube.

We also roasted some baby potatoes with olive oil, salt and black pepper. =)
