This was one of the lunch which I brought to work. I cooked rice with the Hainanese chicken rice paste, then added luncheon meat, sunny side up and veggies to it. This was prepared the night before and steamed using my electric lunch box at work the next day. Notice that I don’t pre-cook my veggies because I am steaming them the next day. Anyway, it was so fragrant that my colleagues were drooling over it. =)
Who says chicken rice must come with chicken? Luncheon meat (Spam) tastes even better!
I was very inspired by my colleague to bake rainbow cupcakes. Having bought different food colorings from the supermarket, I decided to give it a try.
For the cupcakes, I used Minnie’s recipe:
– 1 cup of olive oil
– 1.5 cups of sugar
– 4 eggs
– 3 cups of all purpose flour
– 1/2 tsp baking soda
– 1 cup of milk
– 2 tbsp fresh lemon juice
– splash of vanilla extract
– Mix oil and sugar, then add egg, milk, lemon juice, and vanilla.
– In a separate bowl, mix flour and baking soda.
– Next add the wet mix and dry mix together and stir well.
– Divide the batter into different bowls and add in the food colorings.
– Scoop the colored batter into the cupcake tray (with cupcake paper).
– Pre-heat oven to 165ºC, then bake for 20-25 mins. Stick toothpick into the cupcake and it should come out clean.

Well, some how the colors got darker after baking. And they looked like poison mushrooms… =___=”
I think I need to adjust the amount of colorings. These looks a bit carcinogenic to me. LOL~!
Anyway, I topped the cupcakes with lemon cream cheese frosting and rainbow sprinklers~

It’s my first time attempting to bake cupcake after eating the rainbow one which my colleague gave me. I was a little ambitious and went to try the brownie cupcake recipe from RasaMalaysia.
So I did the brownie part and let it bake for a while according to the recipe. For the chocolate part, I used a mixture of 47% and 55% chocolate and reduced the amount of sugar. Then I scooped the cupcake mixture over the brownie which had set a little after baking.
After baking, I let them cool on the rack. The cupcake portion is a bit brownish because I used brown sugar instead of white sugar. I only get 6 cupcakes and 1 small rectangular tray from the recipe. Was wondering why the yield was so little.

After tasting it, I finally figured out why the yield was little. I used baking soda instead of baking powder and that’s why the cupcake portion wasn’t fluffy. Since there’s no acid content for the baking soda to act on, the cake remained dense and didn’t rise after baking. LOL~ I am such a noob in baking…
Anyway, the taste is still good except the fact that I have 2 dense layers. Next time I will take note of the ingredients before starting to bake anything.
