After the poison mushroom cupcakes, I decided to bake something more decent. This time, I went to get the pre-mix because I got lazy.
Using pre-mix is so convenient. All I have to do is to add oil and eggs and the mixture is ready~ This omits the need to wash multiple bowls, utensils and electric mixer etc.
Filling the cupcakes tray to 3/4 full, popping them into the oven and here comes my pretty cupcakes~
It’s so easy and yummy~
I baked them in 2 batches because my baking tray is so small. And I did something stupid. In one of the batches, I added chocolate in the middle of the cupcakes. Then without thinking, I poked toothpicks in to see if the cupcakes were ready, and the toothpicks kept coming out coated with chocolate. =____=” Really stupid of me… It took me a while before I realised the problem and trust me, I rolled my eyeballs at myself till they almost drop out.
That’s the sad life of a noob baker…
I was very inspired by my colleague to bake rainbow cupcakes. Having bought different food colorings from the supermarket, I decided to give it a try.
For the cupcakes, I used Minnie’s recipe:
– 1 cup of olive oil
– 1.5 cups of sugar
– 4 eggs
– 3 cups of all purpose flour
– 1/2 tsp baking soda
– 1 cup of milk
– 2 tbsp fresh lemon juice
– splash of vanilla extract
– Mix oil and sugar, then add egg, milk, lemon juice, and vanilla.
– In a separate bowl, mix flour and baking soda.
– Next add the wet mix and dry mix together and stir well.
– Divide the batter into different bowls and add in the food colorings.
– Scoop the colored batter into the cupcake tray (with cupcake paper).
– Pre-heat oven to 165ºC, then bake for 20-25 mins. Stick toothpick into the cupcake and it should come out clean.

Well, some how the colors got darker after baking. And they looked like poison mushrooms… =___=”
I think I need to adjust the amount of colorings. These looks a bit carcinogenic to me. LOL~!
Anyway, I topped the cupcakes with lemon cream cheese frosting and rainbow sprinklers~

I was inspired to bake a carrot cake after eating an awesome one which my boss bought from SICC. It was Pakcik’s birthday, so I took this opportunity to bake him a carrot cake~
Since I am such a noob baker, I was well-prepared to buy a ready-made cake in case mine failed. =P
I followed the recipe from Delia Online. And I guess the toughest was to shred those carrots…
The cake look pretty decent prior frosting. That’s a good sign~ I added the syrup glaze with care, trying my best not to drown the cake.
For the frosting, I made cream cheese frosting because I think it tastes best with carrot cake. As you can see, my frosting skill sux!
Yea~ It made it to Pakcik’s hands. He made a wish and blew the candle. So now’s the time to reveal how the cake looks like on the inside.
Well, it was a success! The cake is very moist, the cinnamon and carrot were awesome match and all of us didn’t get tummy ache after eating~ =)
Although it’s an ugly cake, but it’s the thought that counts, isn’t it?
